- 1/2 cup pure maple syrup
- 2 tablespoons Dijon mustard

- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 4 medium sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix maple syrup, Dijon mustard, soy sauce, garlic powder, and onion powder to create the glaze.
- Place the chicken breasts in a baking dish and pour half of the glaze over them.
- In another bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper.
- Spread the sweet potatoes around the chicken in the baking dish.
- Drizzle the remaining glaze over the sweet potatoes.
- Bake for 25-30 minutes or until the chicken is cooked through and the sweet potatoes are tender.
- Serve warm, drizzling any remaining glaze over the dish.
Notes
- For extra flavor, marinate the chicken in the glaze for a few hours before cooking.
- Feel free to add your favorite herbs or spices to the sweet potatoes.
