Description

A light and fluffy sandwich made with low-carb cloud bread, filled with turkey and your favorite toppings.


Ingredients

Scale
  • 3 large eggs
  • 3 oz cream cheese
  • 1/4 tsp baking powder
  • Salt to taste
  • 4 oz sliced turkey
  • Leafy greens (lettuce, spinach, etc.)
  • Tomato slices
  • Mustard or mayonnaise (optional)

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Separate the egg whites and yolks into two bowls.
  3. In the bowl with egg yolks, add cream cheese, baking powder, and salt. Mix until smooth.
  4. In the other bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the egg whites into the yolk mixture until combined.
  6. Line a baking sheet with parchment paper and spoon the mixture into rounds.
  7. Bake for 25-30 minutes or until golden brown.
  8. Let the cloud bread cool before assembling the sandwich.
  9. Layer turkey, leafy greens, and tomato slices on one piece of cloud bread, add mustard or mayonnaise if desired, and top with another piece of cloud bread.

Notes

  • Store leftover cloud bread in an airtight container in the refrigerator for up to a week.
