Description

Delicious loaded sweet potato skins topped with crispy bacon, cheese, and green onions, perfect for impressing guests.


Ingredients

  • 4 medium sweet potatoes
  • 6 slices of bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
  3. While the sweet potatoes are baking, cook the bacon in a skillet until crispy. Remove and crumble.
  4. Once the sweet potatoes are cool enough to handle, cut them in half lengthwise and scoop out some of the flesh, leaving a small border.
  5. Brush the skins with olive oil and season with salt and pepper.
  6. Place the skins back in the oven and bake for an additional 10-15 minutes until crispy.
  7. Remove from the oven and fill each skin with cheese and crumbled bacon.
  8. Return to the oven for another 5 minutes until the cheese is melted.
  9. Top with sour cream and green onions before serving.

Notes

  • For a healthier option, you can use turkey bacon.
  • Feel free to add other toppings like jalapeños or avocado.
