Ingredients

  • 4 large sweet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 cup butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • 1/2 cup mini marshmallows (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and cube the sweet potatoes, then boil them in salted water until tender.
  3. Drain the sweet potatoes and mash them in a large bowl.
  4. Add sour cream, milk, melted butter, salt, and pepper to the mashed sweet potatoes and mix well.
  5. Fold in half of the cheddar cheese, bacon, and green onions.
  6. Transfer the mixture to a greased baking dish and spread evenly.
