- 2 boxes Jiffy Corn Muffin Mix
- 1 can creamed corn (15 oz)
- 1 can whole kernel corn (15 oz)
- 1 cup sour cream
- 1/2 cup melted butter
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the Jiffy Corn Muffin Mix, creamed corn, whole kernel corn, sour cream, and melted butter.
- Mix until well combined.
- Fold in the shredded cheddar cheese.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake for 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add diced jalapeños.
- This casserole can be made ahead of time and reheated.
- Serve with chili or as a side dish for barbecues.
