- 1 pound ground beef
- 1/2 pound ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8 cups chicken broth
- 2 cups chopped kale or spinach
- 1 cup small pasta (like acini di pepe)
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, salt, and pepper. Mix well and form into small meatballs.
- In a large pot, bring chicken broth to a boil.
- Add the meatballs to the boiling broth and cook for about 10 minutes.
- Add the chopped kale or spinach and pasta to the pot. Cook until the pasta is al dente, about 8-10 minutes.
- Season with red pepper flakes if desired and serve hot.
Notes
- For a richer flavor, you can sauté onions and garlic before adding the broth.
- Feel free to use any leafy greens you prefer.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
