Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup brewed coffee, cooled
  • 1 tablespoon Irish whiskey
  • 1 teaspoon vanilla extract
  • ½ cup heavy cream
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a greased 9×13 inch baking pan.
  4. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the cooled coffee, Irish whiskey, and vanilla extract until fully combined.
  7. Pour the cheesecake mixture over the crust in the baking pan.
  8. Bake for 40-45 minutes or until the center is set.
  9. Let it cool completely, then refrigerate for at least 4 hours.
  10. Before serving, whip the heavy cream and spread it over the top, then dust with cocoa powder.

Notes

  • For a stronger coffee flavor, use espresso instead of brewed coffee.
  • Make sure the cream cheese is at room temperature for a smoother batter.
