- 4 cups chicken broth
- 2 cups water
- 2 packs of ramen noodles
- 1 tablespoon soy sauce
- 1 tablespoon miso paste
- 2 green onions, chopped
- 1 cup sliced mushrooms
- 2 soft-boiled eggs
- 1 cup spinach
- 1 teaspoon sesame oil
Instructions
- In a large pot, combine chicken broth and water, and bring to a boil.
- Add soy sauce and miso paste, stirring until dissolved.
- Add mushrooms and cook for 5 minutes.
- Meanwhile, cook ramen noodles according to package instructions.
- Once noodles are cooked, drain and add them to the broth.
- Stir in spinach and cook for an additional 2 minutes.
- Serve hot, topped with soft-boiled eggs and green onions.
- Drizzle with sesame oil before serving.
Notes
- Feel free to add your favorite vegetables or proteins.
- Adjust the seasoning to taste.
- For a spicier version, add chili oil or flakes.
