Ingredients

  • 2 cups water
  • 2 packs of ramen noodles
  • 1 tablespoon soy sauce
  • 1 tablespoon miso paste
  • 2 green onions, chopped
  • 1 cup sliced mushrooms
  • 2 soft-boiled eggs
  • 1 cup spinach
  • 1 teaspoon sesame oil

Instructions

  1. In a large pot, combine chicken broth and water, and bring to a boil.
  2. Add soy sauce and miso paste, stirring until dissolved.
  3. Add mushrooms and cook for 5 minutes.
  4. Meanwhile, cook ramen noodles according to package instructions.
  5. Once noodles are cooked, drain and add them to the broth.
  6. Stir in spinach and cook for an additional 2 minutes.
  7. Serve hot, topped with soft-boiled eggs and green onions.
  8. Drizzle with sesame oil before serving.
