- 1 cup brown rice
- 2 medium sweet potatoes, diced
- 2 chicken breasts, diced
- 1 tablespoon olive oil

- 2 cups spinach
- 1 avocado, sliced
Instructions
- Cook the brown rice according to package instructions.
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet.
- Bake sweet potatoes for 25-30 minutes or until tender.
- In a skillet, cook the diced chicken over medium heat until fully cooked, about 7-10 minutes.
- In a bowl, layer the cooked rice, sweet potatoes, chicken, spinach, and avocado.
- Serve warm and enjoy!
