Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 bottle (14.9 oz) Guinness beer
  • 4 cups beef broth
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Remove the beef and set aside. In the same pot, add onions, carrots, and celery; sauté until softened.
  4. Add garlic and tomato paste, cooking for an additional minute.
  5. Pour in the Guinness beer, scraping the bottom of the pot to deglaze.
  6. Add the beef back to the pot along with beef broth, bay leaves, thyme, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 2 hours, or until the beef is tender.
  8. Remove bay leaves and serve hot, garnished with fresh parsley.

Notes

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
  • Serve with crusty bread for a complete meal.
  • This stew can be made a day in advance for better flavor.
