Description
A hearty and flavorful Irish beef stew made with tender beef, vegetables, and rich Guinness beer, perfect for a comforting meal.

- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 bottle (14.9 oz) Guinness beer
- 4 cups beef broth
- 2 bay leaves
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the beef cubes and brown on all sides.
- Remove the beef and set aside. In the same pot, add onions, carrots, and celery; sauté until softened.
- Add garlic and tomato paste, cooking for an additional minute.
- Pour in the Guinness beer, scraping the bottom of the pot to deglaze.
- Add the beef back to the pot along with beef broth, bay leaves, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 2 hours, or until the beef is tender.
- Remove bay leaves and serve hot, garnished with fresh parsley.
Notes
- For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
- Serve with crusty bread for a complete meal.
- This stew can be made a day in advance for better flavor.
