Ingredients

  • 1/2 cup unsweetened cocoa powder

  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tablespoon green food coloring
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, mix the vegetable oil, buttermilk, eggs, food coloring, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fill each cupcake liner about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cupcakes cool completely before frosting.
  8. For the Irish buttercream, beat together butter, powdered sugar, and a splash of cream until fluffy and smooth.
  9. Frost the cooled cupcakes with the Irish buttercream and enjoy!
