- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 1 tablespoon green food coloring
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- In another bowl, mix the vegetable oil, buttermilk, eggs, food coloring, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Fill each cupcake liner about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool completely before frosting.
- For the Irish buttercream, beat together butter, powdered sugar, and a splash of cream until fluffy and smooth.
- Frost the cooled cupcakes with the Irish buttercream and enjoy!
Notes
- For a richer flavor, use dark cocoa powder.
- Store cupcakes in an airtight container at room temperature for up to 3 days.
- Feel free to add sprinkles on top for decoration.
