- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup feta cheese, crumbled
- 1/4 cup parsley, chopped
- 1 egg
- 2 cloves garlic, minced
- 1 tsp oregano
- Salt and pepper to taste
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 lemon, zested and juiced
- 2 tbsp olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground chicken, breadcrumbs, feta cheese, parsley, egg, garlic, oregano, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake the meatballs for 20-25 minutes or until cooked through.
- In a saucepan, heat olive oil over medium heat. Add orzo and toast for 1-2 minutes.
- Add chicken broth, lemon zest, and lemon juice to the orzo. Bring to a boil, then reduce heat and simmer until orzo is cooked, about 10 minutes.
- Serve the meatballs over the lemon orzo and garnish with additional parsley if desired.
Notes
- For a gluten-free option, use gluten-free breadcrumbs and orzo.
- Feel free to add more herbs like dill or mint for extra flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
