A delicious and healthy twist on traditional lasagna, these Gluten-Free Zucchini Lasagna Roll-Ups are filled with ricotta cheese, spinach, and marinara sauce, making them a perfect low-carb meal.

- 4 medium zucchinis
- 1 cup ricotta cheese
- 2 cups fresh spinach
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips.
- In a bowl, mix ricotta cheese, spinach, egg, Italian seasoning, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Take a zucchini strip, place a spoonful of the ricotta mixture on one end, and roll it up.
- Place the roll-up seam side down in the baking dish.
- Repeat with the remaining zucchini strips and filling.
- Top the roll-ups with remaining marinara sauce and sprinkle with mozzarella and Parmesan cheese.
- Bake for 25-30 minutes until the cheese is bubbly and golden.
Notes
- For extra flavor, add garlic to the ricotta mixture.
- Make sure to salt the zucchini strips and let them sit for 10 minutes to draw out moisture.
- These roll-ups can be made ahead of time and stored in the refrigerator before baking.
