Delicious pumpkin pancakes inspired by Gilmore Girls, served with a rich cinnamon butter.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup pumpkin puree
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1/4 cup softened butter
- 1/4 cup powdered sugar
- 1 teaspoon cinnamon (for the butter)
Instructions
- In a bowl, mix together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the buttermilk, pumpkin puree, egg, and melted butter.
- Combine the wet and dry ingredients until just mixed.
- Heat a skillet over medium heat and grease lightly.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- For the cinnamon butter, mix softened butter, powdered sugar, and cinnamon until smooth.
- Serve pancakes warm with a dollop of cinnamon butter on top.
Notes
- For a dairy-free version, substitute buttermilk with almond milk and use vegan butter.
- These pancakes can be made ahead and reheated in the toaster.
