Description

Ingredients

  • 1/2 cup pumpkin puree
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/4 cup softened butter
  • 1/4 cup powdered sugar
  • 1 teaspoon cinnamon (for the butter)

Instructions

  1. In a bowl, mix together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  2. In another bowl, whisk together the buttermilk, pumpkin puree, egg, and melted butter.
  3. Combine the wet and dry ingredients until just mixed.
  4. Heat a skillet over medium heat and grease lightly.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. For the cinnamon butter, mix softened butter, powdered sugar, and cinnamon until smooth.
  8. Serve pancakes warm with a dollop of cinnamon butter on top.

Notes

  • For a dairy-free version, substitute buttermilk with almond milk and use vegan butter.
  • These pancakes can be made ahead and reheated in the toaster.
