Description

A delicious and healthy frittata made with fresh spring vegetables and creamy feta cheese.


Ingredients

  • 6 large eggs
  • 1 cup of chopped spring vegetables (asparagus, peas, and spinach)
  • 1/2 cup of crumbled feta cheese
  • 1/4 cup of milk
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Add the chopped spring vegetables and sauté until tender.
  5. Pour the egg mixture over the vegetables and cook for a few minutes until the edges start to set.
  6. Sprinkle the crumbled feta cheese on top.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden.
  8. Let it cool for a few minutes before slicing and serving.
