- Filtered water (as needed)
Instructions
- In a large bowl, combine the shredded purple cabbage, grated ginger, grated turmeric, sea salt, and sugar.
- Massage the mixture with your hands for about 5-10 minutes until the cabbage releases its juices.
- Pack the mixture tightly into a clean glass jar, leaving some space at the top for expansion.
- Add filtered water if necessary to cover the cabbage completely.
- Seal the jar with a lid and let it ferment at room temperature for 5-10 days, checking daily.
- Once fermented to your liking, transfer the jar to the refrigerator to slow down the fermentation process.
