- 4 pounds beef short ribs
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 1 tablespoon Worcestershire sauce
- 2 tablespoons brown sugar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 bay leaf
Instructions
- Heat olive oil in a skillet over medium-high heat. Sear the short ribs on all sides until browned.
- Transfer the short ribs to the crockpot.
- Add chopped onion and minced garlic to the skillet and sauté until softened.
- Pour in beef broth, red wine, Worcestershire sauce, and stir in brown sugar, salt, pepper, smoked paprika, thyme, and bay leaf.
- Bring the mixture to a simmer, then pour it over the short ribs in the crockpot.
- Cover and cook on low for 8 hours or until the meat is tender and falls off the bone.
- Remove the short ribs and strain the sauce if desired. Serve the ribs with the sauce drizzled on top.
Notes
- For extra flavor, marinate the short ribs overnight in the seasoning mix.
- Serve with mashed potatoes or crusty bread to soak up the sauce.
- Leftovers can be stored in the refrigerator for up to 3 days.
