Ingredients

  • 4 lbs beef short ribs
  • 2 cups apple cider
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the short ribs with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat and brown the short ribs on all sides.
  4. Remove the ribs and set aside. In the same pot, add onion, garlic, carrots, and celery, and sauté until softened.
  5. Add apple cider, thyme, and rosemary, and bring to a simmer.
  6. Return the short ribs to the pot, cover, and transfer to the oven.
  7. Braise for 3 hours or until the meat is tender and falls off the bone.
  8. Remove from the oven and let rest before serving.
