- 2 lbs beef chuck, cut into 1-inch cubes
- 2 cups apple cider
- 4 cups beef broth
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp flour (optional, for thickening)
- 4 cups mashed potatoes (for serving)
Instructions
- In a large pot, heat olive oil over medium heat. Add the beef cubes and brown on all sides.
- Add the chopped onion and minced garlic, cooking until the onion is translucent.
- Stir in the carrots, potatoes, thyme, salt, and pepper.
- Pour in the apple cider and beef broth, bringing the mixture to a boil.
- Reduce heat to low, cover, and let simmer for 1.5 to 2 hours, or until the beef is tender.
- If desired, mix flour with a little water to create a slurry and stir into the stew to thicken.
- Serve the beef stew over a bed of creamy mashed potatoes.
Notes
- For a richer flavor, use homemade beef broth.
- Feel free to add other vegetables like peas or green beans.
- This stew can be made a day ahead and reheated for better flavor.
