- 1 cup elderflower cordial
- 1 cup lime juice
- 2 tablespoons gelatin powder
- 1/2 cup water
- 1/4 cup sugar
- Fresh mint leaves for garnish
Instructions
- In a small bowl, sprinkle gelatin over water and let it bloom for 5 minutes.
- In a saucepan, combine elderflower cordial, lime juice, and sugar. Heat gently until sugar dissolves.
- Remove from heat and stir in the bloomed gelatin until fully dissolved.
- Pour the mixture into spherical molds and refrigerate for at least 4 hours or until set.
- Once set, carefully remove the jelly spheres from the molds.
- Serve chilled, garnished with fresh mint leaves.
Notes
- Ensure the molds are well-greased for easy removal.
- Adjust the sweetness by adding more or less sugar according to taste.
- These jelly spheres can be made a day in advance.
