- 2 large eggplants, sliced
- 3 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the eggplants and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
- Rinse the eggplant slices and pat them dry with paper towels.
- Dredge each slice in flour, dip in beaten eggs, and coat with breadcrumbs.
- In a large skillet, heat oil over medium heat and fry the eggplant slices until golden brown on both sides.
- In a baking dish, spread a layer of marinara sauce, followed by a layer of fried eggplant, mozzarella, and Parmesan cheese. Repeat the layers until all ingredients are used, finishing with cheese on top.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a healthier version, you can bake the eggplant slices instead of frying them.
- Feel free to add other vegetables like zucchini or bell peppers for extra flavor.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
