Ingredients

  • 2 large eggplants, sliced
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
  3. Rinse the eggplant slices and pat them dry with paper towels.
  4. Dredge each slice in flour, dip in beaten eggs, and coat with breadcrumbs.
  5. In a large skillet, heat oil over medium heat and fry the eggplant slices until golden brown on both sides.
  6. In a baking dish, spread a layer of marinara sauce, followed by a layer of fried eggplant, mozzarella, and Parmesan cheese. Repeat the layers until all ingredients are used, finishing with cheese on top.
  7. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.
