- 1 cup fresh spinach, chopped
- 1/2 cup unsweetened cocoa powder
- 1/2 cup almond flour
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a blender, combine the spinach, eggs, honey (or maple syrup), coconut oil, and vanilla extract until smooth.
- In a mixing bowl, whisk together the cocoa powder, almond flour, baking powder, and salt.
- Pour the spinach mixture into the dry ingredients and mix until well combined.
- Spread the batter evenly in the prepared baking pan.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into squares and serving.
Notes
- For a richer flavor, add chocolate chips to the batter.
- Store leftovers in an airtight container in the refrigerator.
- These brownies can be frozen for up to 3 months.
