- 1 cup crushed graham crackers
- 1/2 cup unsalted butter, melted
- 1 (3.4 oz) package pistachio instant pudding mix
- 2 cups milk
- 1 (8 oz) package cream cheese, softened
- 1 cup powdered sugar
- 1 (8 oz) container whipped topping, thawed
- 1/2 cup chopped pistachios (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine crushed graham crackers and melted butter, then press the mixture into the bottom of a 9×13 inch baking dish.
- Bake the crust for 10 minutes, then let it cool.
- In a separate bowl, whisk together the pistachio pudding mix and milk until thickened.
- In another bowl, beat the cream cheese and powdered sugar until smooth, then fold in half of the whipped topping.
- Spread the cream cheese mixture over the cooled crust, followed by the pistachio pudding layer.
- Top with the remaining whipped topping and sprinkle with chopped pistachios.
- Refrigerate for at least 4 hours before serving.
Notes
- For a richer flavor, use heavy cream instead of whipped topping.
- Can be made a day in advance for better flavor.
