Ingredients

  • 1 cup crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 (3.4 oz) package pistachio instant pudding mix
  • 2 cups milk
  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8 oz) container whipped topping, thawed
  • 1/2 cup chopped pistachios (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine crushed graham crackers and melted butter, then press the mixture into the bottom of a 9×13 inch baking dish.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In a separate bowl, whisk together the pistachio pudding mix and milk until thickened.
  5. In another bowl, beat the cream cheese and powdered sugar until smooth, then fold in half of the whipped topping.
  6. Spread the cream cheese mixture over the cooled crust, followed by the pistachio pudding layer.
  7. Top with the remaining whipped topping and sprinkle with chopped pistachios.
  8. Refrigerate for at least 4 hours before serving.

  • For a richer flavor, use heavy cream instead of whipped topping.
