- 1 lb Italian sausage
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 4 medium potatoes, sliced
- 2 cups kale, chopped
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned. Drain excess fat.
- Add the diced onion and minced garlic to the pot, cooking until the onion is translucent.
- Pour in the chicken broth and add the sliced potatoes. Bring to a boil.
- Reduce heat and simmer until the potatoes are tender, about 15 minutes.
- Stir in the chopped kale and heavy cream. Cook for an additional 5 minutes.
- Season with salt and pepper to taste before serving.

- For a lighter version, substitute heavy cream with half-and-half or milk.
- Feel free to add more vegetables like carrots or celery for extra flavor.
