- 1 cup cream cheese, softened
- 1 cup pumpkin puree
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1 cup graham cracker crumbs
- 1/2 cup chocolate chips (optional)
Instructions
- In a mixing bowl, combine the softened cream cheese, pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice until smooth.
- Gradually mix in the graham cracker crumbs until well combined.
- Chill the mixture in the refrigerator for about 30 minutes to make it easier to handle.
- Once chilled, scoop out small portions of the mixture and roll them into balls.
- If desired, melt chocolate chips and dip the balls into the chocolate, then place them on a parchment-lined tray.
- Refrigerate the balls for another 30 minutes to set before serving.
