Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/4 cup honey

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together the mashed sweet potatoes, cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, eggs, melted butter, and honey.
  4. Combine the wet ingredients with the dry ingredients and stir until just combined.
  5. Pour the batter into a greased baking dish.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. While the cornbread is baking, prepare the honey butter by mixing softened butter with honey.
  8. Once the cornbread is done, let it cool slightly before serving with honey butter.

  • For a richer flavor, use brown sugar instead of white sugar.
