  • 4 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, combine the chicken broth and green enchilada sauce over medium heat.
  2. Add the shredded chicken, black beans, corn, cumin, garlic powder, onion powder, salt, and pepper.
  3. Bring the soup to a simmer and cook for about 10-15 minutes, stirring occasionally.
  4. If desired, stir in shredded cheese until melted.
  5. Serve hot, garnished with fresh cilantro if desired.
