Description

A fun and festive Earth Day Pinata Cake filled with hidden candy ‘rocks’ that will delight both kids and adults alike.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup assorted candy (for filling)
  • Green frosting (for decoration)
  • Chocolate rocks (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla to the dry ingredients and mix until well combined.
  4. Stir in the boiling water until the batter is smooth.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. Once cooled, cut a small circle in the center of one cake layer to create a cavity for the candy.
  9. Fill the cavity with assorted candy ‘rocks’.
  10. Place the second cake layer on top and frost the entire cake with green frosting.
  11. Decorate with chocolate rocks on top for a fun Earth Day theme.

Notes

  • Make sure the cakes are completely cool before frosting to prevent melting.
  • You can use any type of candy for the filling, but make sure they are small enough to fit in the cavity.
