Description

Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon hot sauce
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chives for garnish

Instructions

  1. Hard boil the eggs by placing them in a pot of cold water, bringing it to a boil, then simmering for 10 minutes.
  2. Remove the eggs from the pot and place them in an ice bath to cool.
  3. Once cooled, peel the eggs and slice them in half lengthwise.
  4. Remove the yolks and place them in a bowl.
  5. Add mayonnaise, Dijon mustard, hot sauce, smoked paprika, salt, and pepper to the yolks and mix until smooth.
  6. Fill the egg whites with the yolk mixture.
  7. Garnish with chopped chives.

Notes

  • For a spicier version, add more hot sauce.
  • These can be made a day in advance and stored in the refrigerator.
