Ingredients

  • 4 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the wild rice under cold water and drain.
  2. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  3. Add sliced mushrooms and cook until softened.
  4. Stir in the wild rice and vegetable broth. Bring to a boil, then reduce heat and simmer for about 45 minutes, or until the rice is tender.
