A delicious and creamy dairy-free and vegan alternative to traditional Alfredo sauce made with cauliflower.

- 1 medium head of cauliflower, chopped
- 2 cups vegetable broth
- 1/4 cup nutritional yeast
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- Salt and pepper to taste
- Pasta of choice (for serving)
Instructions
- Steam the chopped cauliflower until tender, about 10-15 minutes.
- In a blender, combine the steamed cauliflower, vegetable broth, nutritional yeast, olive oil, garlic, onion powder, salt, and pepper.
- Blend until smooth and creamy.
- Cook the pasta according to package instructions.
- Drain the pasta and return it to the pot.
- Add the creamy cauliflower sauce to the pasta and stir to combine.
- Serve warm, garnished with fresh herbs if desired.
Notes
- For a thicker sauce, reduce the amount of vegetable broth.
- Add sautéed mushrooms or spinach for extra flavor and nutrition.
- This sauce can be stored in the refrigerator for up to 3 days.
