Description

Ingredients

  • 1 medium head of cauliflower, chopped
  • 2 cups vegetable broth
  • 1/4 cup nutritional yeast
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Pasta of choice (for serving)

Instructions

  1. Steam the chopped cauliflower until tender, about 10-15 minutes.
  2. In a blender, combine the steamed cauliflower, vegetable broth, nutritional yeast, olive oil, garlic, onion powder, salt, and pepper.
  3. Blend until smooth and creamy.
  4. Cook the pasta according to package instructions.
  5. Drain the pasta and return it to the pot.
  6. Add the creamy cauliflower sauce to the pasta and stir to combine.
  7. Serve warm, garnished with fresh herbs if desired.
