Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add ground turkey and cook until browned.
  4. Stir in diced sweet potatoes, black beans, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 30-40 minutes, until sweet potatoes are tender.
