Description

Colcannon is a traditional Irish dish made with mashed potatoes, cabbage, and kale, offering a comforting and hearty meal.


Ingredients

Scale
  • 2 pounds potatoes, peeled and quartered
  • 1 cup chopped cabbage
  • 1 cup chopped kale
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes.
  2. In a separate pot, steam the cabbage and kale until wilted, about 5-7 minutes.
  3. Drain the potatoes and mash them in a large bowl.
  4. Add the steamed cabbage and kale to the mashed potatoes.
  5. Stir in the milk and butter until well combined.
  6. Season with salt and pepper to taste.
  7. Serve hot, optionally topped with additional butter.
