Description

A comforting and delicious combination of classic tomato soup paired with gooey grilled cheese sandwiches.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1/4 cup fresh basil, chopped
  • 4 slices of bread
  • 4 slices of cheese (cheddar or your choice)
  • Butter for grilling

Instructions

  1. Heat olive oil in a pot over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic and cook for another minute.
  3. Stir in crushed tomatoes, vegetable broth, sugar, salt, and pepper. Bring to a boil.
  4. Reduce heat and let simmer for 20 minutes.
  5. Stir in fresh basil before serving.
  6. For the grilled cheese, butter one side of each slice of bread.
  7. Place cheese between two slices of bread, buttered sides out.
  8. Grill on medium heat until golden brown and cheese is melted, about 3-4 minutes per side.
  9. Serve the soup hot with the grilled cheese on the side.

  • For a creamier soup, blend the soup before adding basil.
  • Feel free to add spices like oregano or thyme for extra flavor.
