Description
A comforting and delicious combination of classic tomato soup paired with gooey grilled cheese sandwiches.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 2 cups vegetable broth
- 1 teaspoon sugar
- Salt and pepper to taste
- 1/4 cup fresh basil, chopped
- 4 slices of bread
- 4 slices of cheese (cheddar or your choice)
- Butter for grilling
Instructions
- Heat olive oil in a pot over medium heat. Add chopped onion and sauté until translucent.
- Add minced garlic and cook for another minute.
- Stir in crushed tomatoes, vegetable broth, sugar, salt, and pepper. Bring to a boil.
- Reduce heat and let simmer for 20 minutes.
- Stir in fresh basil before serving.
- For the grilled cheese, butter one side of each slice of bread.
- Place cheese between two slices of bread, buttered sides out.
- Grill on medium heat until golden brown and cheese is melted, about 3-4 minutes per side.
- Serve the soup hot with the grilled cheese on the side.
Notes
- For a creamier soup, blend the soup before adding basil.
- Feel free to add spices like oregano or thyme for extra flavor.
- Use your favorite type of cheese for the grilled cheese sandwiches.
