Ingredients

  • 2 cups heavy cream
  • 1 cup granulated sugar
  • 6 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup additional sugar for caramelizing

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream and vanilla extract over medium heat until it begins to simmer.
  3. In a bowl, whisk together the egg yolks and granulated sugar until well combined.
  4. Slowly pour the hot cream into the egg mixture, whisking constantly to prevent curdling.
  5. Strain the mixture through a fine-mesh sieve into a measuring cup.
  6. Pour the mixture into ramekins and place them in a baking dish.
  7. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.
  8. Bake for 30-35 minutes, or until the edges are set but the center is still slightly jiggly.
  9. Remove from the oven and let cool, then refrigerate for at least 2 hours.
  10. Before serving, sprinkle a thin layer of sugar on top of each custard and use a kitchen torch to caramelize the sugar until golden brown.

  • Let the crème brûlée cool completely before refrigerating.
