Ingredients

  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter into the mashed bananas.
  4. Add baking soda and salt, and mix well.
  5. Stir in the sugar, egg, and vanilla extract until combined.
  6. Mix in the flour until just incorporated.
  7. In a separate bowl, combine the sugar and cinnamon for the topping.
  8. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  9. Sprinkle the cinnamon sugar mixture on top of each muffin.
  10. Bake for 18-20 minutes or until a toothpick comes out clean.
  11. Let cool for a few minutes before transferring to a wire rack.

  • Make sure the bananas are very ripe for the best flavor.
