  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup jam or chocolate ganache for filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  7. Using your thumb or the back of a spoon, make an indentation in the center of each ball.
  8. Fill each indentation with your choice of jam or chocolate ganache.
  9. Bake for 12-15 minutes, or until the edges are set.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
