- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the flour, cocoa powder, baking powder, and salt.
- In another bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until well combined.
- Add the eggs, vanilla extract, and peppermint extract to the sugar mixture and mix until smooth.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Chill the dough in the refrigerator for at least 30 minutes.
- Once chilled, scoop out tablespoon-sized portions of dough and roll them into balls.
- Roll each ball in powdered sugar until fully coated.
- Place the cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a stronger peppermint flavor, increase the peppermint extract to 1 teaspoon.
- Store cookies in an airtight container for up to one week.
- These cookies can be frozen for up to three months.
