Description

Ingredients

  • 2 lbs chicken thighs
  • 1 can (15 oz) hominy, drained and rinsed
  • 4 cups chicken broth
  • 1 cup tomatillos, husked and chopped
  • 2 green chilies, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a large pot, combine chicken thighs, chicken broth, onion, garlic, cumin, oregano, salt, and pepper. Bring to a boil.
  2. Reduce heat and simmer for about 30 minutes, or until chicken is cooked through.
  3. Remove chicken from the pot and shred it using two forks.
  4. Add tomatillos, green chilies, and hominy to the pot. Simmer for an additional 15 minutes.
  5. Return shredded chicken to the pot and stir to combine.
  6. Serve hot, garnished with fresh cilantro and lime wedges.
