- 4 cups chicken broth
- 1 cup water
- 1/2 cup lemon juice
- 1/4 cup capers, drained
- 1 medium onion, diced
- 2 cloves garlic, minced

- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and minced garlic, sauté until translucent.
- Season the chicken breasts with salt and pepper, then add to the pot.
- Pour in the chicken broth and water, bring to a boil.
- Reduce heat and simmer for 20 minutes, or until chicken is cooked through.
- Remove chicken, shred it, and return it to the pot.
- Add lemon juice, capers, and oregano, stir well.
- Simmer for an additional 5 minutes.
- Serve hot, garnished with fresh parsley.
