- 2 medium zucchinis, sliced
- 2 medium yellow squashes, sliced
- 1 cup shredded low-fat cheese
- 1/2 cup Greek yogurt
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the air fryer to 350°F (175°C).
- In a large bowl, combine the sliced zucchinis and squashes with olive oil, garlic powder, onion powder, salt, and pepper.
- Add the Greek yogurt and mix well until the vegetables are coated.
- Stir in the shredded low-fat cheese and Parmesan cheese.
- Transfer the mixture to the air fryer basket and spread it evenly.
- Cook for 15-20 minutes, or until the vegetables are tender and the cheese is melted and bubbly.
- Remove from the air fryer and let it cool for a few minutes before serving.
