- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/2 cup graham cracker crumbs
- 1/4 cup butter, melted
- 1/4 cup powdered sugar
- Fresh fruit or chocolate for topping (optional)
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, beat the cream cheese until smooth.
- Add granulated sugar and vanilla extract, mixing until well combined.
- Stir in sour cream until the mixture is creamy.
- In a separate bowl, combine graham cracker crumbs and melted butter.
- Press the graham cracker mixture into the bottom of mini muffin tins to form a crust.
- Pour the cheesecake mixture over the crust in each muffin tin.
- Bake for 15-20 minutes or until set.
- Allow to cool, then refrigerate for at least 2 hours before serving.
- Top with fresh fruit or chocolate if desired.
Notes
- Make sure the cream cheese is at room temperature for easier mixing.
- These bites can be made ahead of time and stored in the refrigerator.
