- 1 lb seafood mix (shrimp, crab, and scallops)
- 1 cup frozen mixed vegetables
- 1/2 cup heavy cream
- 1 cup chicken broth
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 package Cheddar Bay biscuit mix
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, melt butter over medium heat. Add flour and stir to create a roux.
- Gradually whisk in chicken broth and heavy cream until smooth.
- Add seafood mix, frozen vegetables, garlic powder, onion powder, thyme, salt, and pepper. Cook until seafood is cooked through.
- Transfer the seafood mixture to a baking dish.
- Prepare Cheddar Bay biscuit mix according to package instructions and fold in shredded cheddar cheese.
- Drop spoonfuls of the biscuit mixture over the seafood filling.
- Bake for 20-25 minutes or until biscuits are golden brown.
- Let cool slightly before serving.
Notes
- Feel free to use any seafood of your choice.
- For a spicier kick, add some cayenne pepper to the seafood mixture.
- This dish can be made ahead of time and baked just before serving.
