Description

A traditional Southern dish made with black-eyed peas, often served on New Year’s Day for good luck.

Ingredients

Scale
  • 1 pound dried black-eyed peas
  • 6 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 smoked ham hock
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional)
  • 2 bay leaves
  • 1 tablespoon olive oil

Instructions

  1. Rinse the black-eyed peas and soak them in water overnight.
  2. In a large pot, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  3. Add the soaked black-eyed peas, water, ham hock, salt, black pepper, cayenne pepper, and bay leaves to the pot.
  4. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours, or until the peas are tender.
  5. Remove the ham hock, shred the meat, and return it to the pot.
  6. Adjust seasoning to taste and serve hot.

Notes

  • For a vegetarian version, omit the ham hock and use vegetable broth.
  • Black-eyed peas can also be cooked in a pressure cooker for faster preparation.
