Instructions
- In a saucepan, combine water and sugar over medium heat until dissolved.
- Add blue spirulina powder and stir until fully incorporated.
- Sprinkle gelatin powder over the mixture and let it sit for 5 minutes to bloom.
- Heat the mixture gently until the gelatin is dissolved, then remove from heat.
- Stir in coconut milk and vanilla extract.
- Pour the mixture into molds and refrigerate for at least 4 hours until set.
- Once set, carefully remove from molds and serve chilled.
Notes
- For a vegan version, use agar-agar instead of gelatin.
- Adjust the sweetness by adding more or less sugar according to your taste.
