- 1 head of cabbage
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup sour cream
- 1 lime, juiced
- 1 jalapeño, minced
- 1/4 cup fresh cilantro, chopped
- 1 cup radishes, thinly sliced
- Tortillas for serving
Instructions
- Preheat the oven to 425°F (220°C).
- Cut the cabbage into wedges and toss with olive oil, salt, and pepper.
- Place the cabbage on a baking sheet and roast for 20-25 minutes until edges are blistered.
- In a bowl, mix sour cream, lime juice, jalapeño, and cilantro to make the spicy lime crema.
- Once the cabbage is done, assemble the tacos by placing cabbage on tortillas and topping with spicy lime crema and radishes.
- Serve immediately and enjoy!
Notes
- For a vegan option, substitute sour cream with a plant-based alternative.
- Adjust the spiciness by adding more or less jalapeño.
