- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a bowl, mix the black beans, corn, cheese, cumin, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet and spread a portion of the bean and corn mixture on half of the tortilla.
- Fold the tortilla over and cook until golden brown, about 3-4 minutes on each side.
- Repeat with the remaining tortillas and filling.
- Cut into wedges and serve warm.

- Serve with salsa or guacamole for added flavor.
