- 1 cup corn

- 1 tsp chili powder

- 8 small corn tortillas
- 1 cup shredded cheese (optional)
- Cooking spray or olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mash the black beans and mix in corn, cumin, chili powder, garlic powder, onion powder, salt, and pepper.
- If using, stir in the shredded cheese until well combined.
- Warm the corn tortillas in a skillet to make them pliable.
- Place a spoonful of the black bean mixture on each tortilla and roll them tightly.
- Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
- Spray the taquitos lightly with cooking spray or brush with olive oil.
- Bake for 20-25 minutes or until golden and crispy.
