Ingredients

  • 1 cup corn
  • 1 tsp cumin
  • 1 tsp chili powder

  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded cheese (optional)
  • Cooking spray or olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mash the black beans and mix in corn, cumin, chili powder, garlic powder, onion powder, salt, and pepper.
  3. If using, stir in the shredded cheese until well combined.
