- 1 cup heavy cream
- 1/2 cup Baileys Irish Cream
- 8 oz dark chocolate, chopped
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- In a saucepan, melt the dark chocolate over low heat, stirring until smooth. Remove from heat and let cool slightly.
- In a mixing bowl, whip the heavy cream until soft peaks form. Gently fold in the Baileys Irish Cream.
- In another bowl, beat the egg yolks with the sugar and vanilla extract until pale and creamy.
- Fold the melted chocolate into the egg yolk mixture until well combined.
- In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- Gently fold the whipped cream into the chocolate mixture, then fold in the egg whites until no white streaks remain.
- Divide the mousse into serving dishes and refrigerate for at least 2 hours before serving.

- For a non-alcoholic version, substitute Baileys with chocolate syrup.
