Description

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 cup buttermilk
  • 1 large egg
  • 1/2 cup raisins or currants (optional)
  • Clotted cream, for serving
  • Strawberry jam, for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the buttermilk and egg.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. If using, fold in the raisins or currants.
  6. Turn the dough onto a floured surface and gently knead it a few times until it comes together.
  7. Pat the dough into a 1-inch thick round and cut out scones using a biscuit cutter.
  8. Place the scones on a baking sheet lined with parchment paper and bake for 12-15 minutes or until golden brown.
  9. Let the scones cool slightly before serving with clotted cream and strawberry jam.
