Delicious and traditional Irish scones served with clotted cream and strawberry jam, perfect for tea time or a sweet treat.
Ingredients

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, cold and cubed
- 1/2 cup buttermilk
- 1 large egg
- 1/2 cup raisins or currants (optional)
- Clotted cream, for serving
- Strawberry jam, for serving
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the buttermilk and egg.
- Pour the wet ingredients into the dry ingredients and mix until just combined. If using, fold in the raisins or currants.
- Turn the dough onto a floured surface and gently knead it a few times until it comes together.
- Pat the dough into a 1-inch thick round and cut out scones using a biscuit cutter.
- Place the scones on a baking sheet lined with parchment paper and bake for 12-15 minutes or until golden brown.
- Let the scones cool slightly before serving with clotted cream and strawberry jam.
Notes
- For best results, use cold ingredients.
- These scones are best served fresh but can be stored in an airtight container for a couple of days.
- Feel free to substitute raisins with other dried fruits or chocolate chips.
